I usually don’t go all that gung-ho for Valentine’s Day…Long-time readers know Jay and I have a pretty rotten track record when it comes to trying to go out for dinner, and I usually don’t really care if I get flowers (Mother’s Day or my birthday are different stories). So most of the time we stay in, and I fix something “fancy.” This year, we’re going to try going out again, so we’ll see if the gods look kindly on us, or we have another kick in the pants. In the meantime, though, we have an easy Valentine’s Day Dessert I can whip up if all goes awry–A Strawberry Cinnamon Cream Cheese Tart!
Chocolate graham crackers for the crust, whipped cinnamon-sugar cream cheese and strawberries topped with a chocolate drizzle. It’s no-bake and simple to make.
In a food processor, pulse the chocolate graham crackers until they become fine crumbs. Add in the melted butter, and mix until combined. Press the dough into the bottom of an 11 x 7-inch tart pan with a removable bottom. Refrigerate 15 minutes. In a mixing bowl, whip the cream cheese until fluffy, about 2 minutes. Add in the sugar and the cinnamon, and mix until combined. Spread the cream cheese mixture over the bottom of the chocolate crust, then top with the sliced strawberries. Melt the semi-sweet chocolate in a small bowl, either using a microwave or a double-boiler. Drizzle over top of the strawberries, and refrigerate the tart for at least 2 hours before serving.And it’s delicious! It’s hard to go wrong with strawberries, chocolate and cream cheese.

Well, if I want a dinner out this year, I’m going to have to remember to call for a reservation. Thankfully this is a small town, so if I call Monday, I should be fine. Hopefully the rest of Brookings doesn’t have the same idea! ;)
Hello–I am back to an earlier post–I wondered about the Dark Chocolate multi-grain Cheerios, and how they make chocolate milk in the bottom of the bowl—-well, they were on sale at HyVee for $1.88 and they jumped into my cart, all because of Trampling Rose, and they are delightful with milk, or as a snack, or mixed with a plain cereal…..it is fun to read your blog and Print out recipes, like today’s!!! I do enjoy a good no-bake dessert…I think I might have to re-do the crust though…It got really soggy rather quickly. Maybe next time I should bake it, instead of just freezing it.
