Mt. Dew and Doritos Cupcakes are a sweet-and-salty taste experiment. If you like your snacks in portable dessert form, these cupcakes are for you!
Yeah, you read that right. Mt. Dew and Doritos Cupcakes. These were another Pinterest find, a few months back. I mentioned them to Marc, one of my coworkers, who drinks probably about as much Mt. Dew and eats about as many Doritos as Jay does. He said the cupcakes sounded kind of good to him, and when I mentioned them to Jay, he agreed.
They both said the same thing–Either they’d be really disgusting, or wind up being the best thing ever.
I’m not a Mt. Dew drinker at all (If I’m going to have soda of any kind, I prefer colas, with RC Cola being my favorite), and I don’t usually eat Doritos–Jay tends to buy the wacky, super-spicy flavors while I’m a Nacho Cheese Doritos kind of gal. And if I’m going to snack, I’d rather bury myself at the bottom of a bag of potato chips anyway. So I’m rather unfamiliar with the combo, but Marc and Jay both speak highly of it.
I had to force myself to try one…And I’ll be honest, they’re not my favorite. They’re waaay too sweet–Cloyingly sweet.
The chip on top helps cut the sweetness a little, but even still, not my thing. That being said, though, Jay liked them. Perhaps he drinks enough Dew that he’s used to the overt sweetness, because he didn’t think they were bad at all.He said you can definitely taste the hint of Mt. Dew present in them, but the overall flavor is lemon. So if you like lemon-flavored desserts, you’ll probably like these. I’m rather picky about what I like when it comes to lemon. Lemon cake/cupcakes are okay, but they have to be certain types of lemon cake.
And as for my coworkers? Everyone who tried one said they were pretty good. I wasn’t expecting to take home an empty box, and I have to bring a couple more to work tomorrow for folks who missed out.
So maybe it’s my tastebuds that are all out of whack. I also got a few 4/20 jokes from people…So if that’s your thing, these might satisfy a strong case of the munchies. That being said, though, I don’t think I’ll be making these again unless I get a request for them!
For the Cupcakes:
- 1 box lemon cake mix
- 1 box lemon pudding mix
- 4 large eggs
- 1/2 C vegetable oil
- 1 1/4 C Mt. Dew
For the Frosting:
- 6 C powdered sugar
- 1 C (2 sticks) unsalted butter, softened
- 1-2 oz. Mt. Dew
- 1/2 Tbsp lemon juice
- 1/2 Tbsp lime juice
- Green food coloring, optional
- Doritos, for topping
Preheat the oven to 350 degrees F. Line 2 cupcake pans with paper liners and set aside.
In a mixing bowl, whisk together the cake mix and the pudding mix. Add the eggs and the vegetable oil--The batter will be VERY thick. Once well-combined, slowly add in the Mt. Dew.
Using a large (3 Tbsp.) scoop, place the batter in the liners, being careful not to overfill. Bake the cupcakes for 15-18 minutes, or until a toothpick inserted in the center of several cakes comes out clean. Cool in the pan 10 minutes, before removing to wire racks to cool completely.
In the bowl of a stand mixer, cream the butter on medium-high speed until light, about 2 minutes. Drop the speed to low, and slowly add the powdered sugar. Once all that has been added, add the lemon and lime juices and a couple tablespoons of the Mt. Dew. If using, add a few drops of green food coloring, and whip the frosting on medium speed for about 3 minutes. If it's too thick, add more Mt. Dew until it reaches the desired consistency.
Frost the cupcakes as desired, topping each cake with a Dorito.
