Chocolate Cake with Salted Caramel ButtercreamWho doesn’t like a good cake? And Chocolate Cake with Salted Caramel Buttercream combines the best of both worlds–Sweet and salty! Recently I was sent a few samples from Immaculate Baking’s new line of dry baking mixes:

Chocolate Cake BoxI admit, I am usually a snob when it comes to boxed mixes–It’s really not that hard to whip up a bunch of flour, cocoa, butter, etc. and have a delicious homemade dessert. That being said, when it comes to brownies, for the most part, I will buy a boxed mix, because with one exception, I have issues in making decent fudge brownies. As such, I tried the Brownie Mix first, and no, I don’t have any photos of the finished product. We ate them all before I had a chance to take pictures! I did put my foot down about anyone having cake before I could photograph it, though:

Despite the fact that my crumb layer didn’t seal as well as I’d hoped, this is one of the better-looking layer cakes I’ve ever made! And the Immaculate Baking cake mix baked up beautifully. I kid you not, if I didn’t know better, I’d swear it was a completely homemade cake!

Salted Caramel Buttercream

Salted Caramel Buttercream
Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes


For the Salted Caramel:

  • 1/4 C (4 Tbsp.) unsalted butter
  • 1/2 C heavy cream
  • 1 C packed dark brown sugar
  • 1/2 tsp. sea salt
  • 1 Tbsp. vanilla extract

For the Buttercream:

  • 1 C Salted Caramel
  • 1/2 C (1 stick) unsalted butter, room temperature
  • 1/4 tsp. sea salt
  • 2 oz. heavy cream
  • 4 C powdered sugar


In a small, light-colored saucepan, combine the butter, cream, brown sugar, and sea salt. Bring to a boil over medium heat. Whisk and cook for 7-10 minutes, until thickened. Whisk in vanilla, and cook 1-2 minutes more. Remove from heat, and cool 5 minutes. Pour into heat-proof container and cool completely.

In the bowl of a stand mixer, combine 1 cup of salted caramel with the butter, and beat on medium speed until combined. Drop the speed to low and add in the sea salt and half of the powdered sugar. Add in half the cream, and the rest of the powdered sugar. If the frosting is too thick, add the remaining cream, then beat on medium-high for 2-3 minutes. Makes enough to frost a 9-inch 2-layer cake.

The bambino declared the cake was absolutely delicious, and I have to agree.   1. Mmm that frosting looks awesome! And I’m with you on brownies being so hard to get right…though I would gladly take up the challenge to make as many brownie recipes as needed to find the perfect one. :P

    • I’ve got one brownie recipe I do pretty well–Thanks to Martha Stewart! :) But otherwise, I can’t do a good fudge brownie to save my life!

      The best part about the salted caramel buttercream is all the leftover salted caramel sauce–Yeah, I eat it with a spoon.
