It’s no secret that I am not a morning person. And by that I mean that while I get up early (as well as go to bed late), it’s not exactly because I want to–I do a lot of blog/social media work in the hour between when I get up and when Jay and the bambino get up (and often after they’ve gone to bed). I drink my 2 cups of coffee and wait for the hatred of being awake to slowly fade. I’m not the kind of person who’s going to jump out of bed, yelling “Good morning world!” and be thrilled about it. I’m the person who slams her hand on the snooze button and buries herself in back blankets, just wanting 10 more minutes before having to face the world. As such, because I am so slow to get moving each morning, I prefer a quick breakfast, which doesn’t always jive with what I need. Cold cereals generally don’t cut it for me–I’m starving within an hour of eating a double-helping of whatever. I try and make the time for something involving toast, eggs, and whatever breakfast meat we happen to have on hand, but more often than not, I run out of time, and then it’s peanut butter toast and OJ in the break room before the bank opens. So I made a large batch of some Crunchy Cinnamon Vanilla Granola, and thought I’d use that for a quick but still protein-packed breakfast.
I got the recipe from 100 Days of Real Food–Not shilling or anything, but I recently signed up for their mailing list and included with that was a meal plan. And included in the meal plan was a granola recipe. I made a couple changes based on what I had in the house, and made it up the night before I wanted it.
I have to say, it smelled SO good while it was baking…One of those “I want to faceplant in this the moment it comes out of the oven!” baking smells that wafts through the house. And it tastes amazing too!
It’s a good thing we’re heading to Costco this weekend–I’m going to need to stock up on more nuts and oats, to make this again!
