Roasted Chicken Caesar Sandwich

So, this budget thing we’re trying…January was a complete flop. We conceded defeat a couple weeks ago. There are definitely a couple tweaks that need to be made…Like remembering that the bambino will need money for his school lunch account. Acceptance of the fact that once a week, we’re going to order from George’s. Or that no matter how much willpower I think I have, I should NOT carry the envelopes around with me. Especially on those days where nothing but Famous Amos Chocolate Chip Cookies from the vending machine will satisfy my sweet tooth, and lo, and behold, there are still two one dollar bills in the grocery envelope. It’s food, so it counts, right? Um, no.

There were other unplanned things…Sort of. A group of us decided to have a belated holiday get-together at Cubby’s one evening, which meant dinner and drinks. I knew it was coming, but I forgot to allocate cash for it, which meant dipping into savings. Oops. But that was worth it for the meal I chose–A Grilled Chicken Caesar Sandwich. Theirs was on ciabatta, and used traditional romaine, as well as bacon, Parmesan, and Caesar dressing. Mine is a Roasted Chicken Caesar Sandwich also on ciabatta (multigrain), with romaine, bacon, Caesar dressing, and Parmesan.

Cubby’s gives you that option (I believe you can also get potato chips, waffle fries, or sweet potato fries). I’m pretty sure they deep-fry theirs, but I bake mine until they’re super-crisp.

Roasted Chicken Caesar Sandwich

Roasted Chicken Caesar Sandwich


  • 2 split chicken breasts
  • salt & pepper, to taste
  • 2 Tbsp. unsalted butter, melted
  • 6 multigrain ciabatta rolls, split in half
  • 12 slices of bacon, cooked crisp
  • 6 Romaine lettuce leaves, cut in half
  • 1 C grated Parmesan
  • Caesar dressing


Preheat the oven to 450 degrees F. Season the chicken breasts with salt and pepper. Place on a rack inside a broiler pan, then drizzle with the melted butter. Roast for 45 minutes, or until a thermometer inserted in the thickest part of the chicken registers 160 degrees. Remove to a cutting board and allow to rest for 10 minutes, before slicing the meat off the bone.

Spread both halves of one of the sandwich rolls with about a Tbsp. of Caesar dressing. Place 1 romaine leaf (2 halves) on the bottom half. Place 2 slices of bacon on top of that. Top with chicken, and some Parmesan. Place the top half of the roll on the sandwich, and repeat with the remaining rolls.

Now that February’s started, we’ll try again with the budget. We got a break in that I got a bonus check from work, which meant stocking up on groceries, as well as other necessities. And since we also found out we’re going to need some car repairs in the very near future, we can reallocate some of the grocery allowance to the car maintenance envelope. Every little bit helps, right?

  1. Looks good! I need to get more creative with chicken breasts since i always have them on hand and Ernie isn’t a huge fan. And yes, in my world making a sandwich out of chicken that isn’t shredded is being creative. :-)

    • That’s too bad Ernie’s not a chicken fan…I seriously could eat it every day! And I say there is nothing wrong with shredded chicken–I’m suddenly thinking BBQ chicken is now a necessity!
