I was on vacation last week, though it didn’t exactly feel like it. I had a quick trip to Ohio to see family and Echo & The Bunnymen, who put on an incredible show, even if I didn’t get to hear my favorite song by them (The Yo Yo Man). It’s funny–As obsessed as I am with The Replacements, I’ve been listening to Echo since I was about 8 or 9. I suppose it’s because I discovered The ‘Mats right before I hit my horribly awkward teenage years, and their songs about not quite fitting in or being just on the edge resonated a lot more with me. Echo is one of those bands I rediscover every few years–They’ll pop up on iTunes and I’ll think “Oh yeah, I love these guys.”
And then, sadly, as soon as I got back to town, we had to head to Minnesota, as Jay’s grandmother had passed away, and we gathered for the funeral. Once that was over and we all had a chance to crash, I decided I needed to get back into my kitchen and start cooking again. Since I work full-time, it’s often hard to make, photograph, and write up a recipe in a timely fashion. Hence my decision to make these Nutella No-Bake Cookies.
I picked up some Nutella, not knowing exactly what I was going to do with it, then I thought no-bake cookies sounded good. It’s been a long time since I’ve made them, and I figured they wouldn’t take a 2-hour chunk out of my evening the way regular cookies would. But then I got lazy and put them off and kept putting them off until now.
Luckily, these come together in minutes. Honestly, I feel like I waited longer for them to set than it did to combine everything! Add a cold glass of your favorite milk, and you’ve got a great afternoon/weekend/anytime snack!
