My poor bambino. I sometimes forget how hard it is to be a kid, and to learn patience (something I still struggle with as an adult). When there’s something he gets excited about or wants to do or see, it gets stuck in his little head, and he can’t let it go. He saw the Minions movie with his summer day care group. He’d practically been bouncing off the walls with excitement waiting for Family Movie Night, once I told him that on December 8, 2015, we’d be going to pick up the Blu-Ray/DVD release of Minions © 2015 Universal Studios. All rights reserved. And because we generally have our dinner in front of the TV when we do family movie night, I wanted something kid-friendly and fun for him, but something with a little more substance for Jay and me. So I made Totchos (tater tot nachos).
I made two versions–A plain version for the bambino, and loaded ones for us adults.
The totchos are easy to make. You start with your tots in the oven, and while those are baking, work on your taco meat.
You can use homemade taco seasoning or a package of it–Whatever you happen to have on-hand. Don’t worry about over-baking the tater tots. Because they’re baked and you’re going to add “wet” toppings, you’re going to want them on the crispier-than-normal side. Once your taco meat is done, pull the tater tots out, and separate your portions. Also get whatever toppings you like, as well as plenty of cheese! You can do this using one large platter or individual plates.
Assembly is easy. Place some of the taco meat on top of the tots, add your cheese, then whatever other toppings you like! For ours, we added black olives, salsa, some shredded lettuce, and sour cream. The bambino got just meat and cheese, which made him happy. And then we settled in to watch Illumination Entertainment’s Minions movie.
Both the Totchos and the movie were a hit!
