Sprinkled Spritz Cookies

Buttery spritz cookies. Small bites of rich sweetness. And thanks to Sprinkle Pop, some added bling!

This was another recipe that went through several changes before I could settle on what I wanted to make. Initially, I thought about making cupcakes. And then cake pops. And then surprise-inside cookies. I even went and bought a couple cookie cutters to make them!

But then I opted for sprinkled and dipped spritz cookies. It had been awhile since I dug out the cookie press, and the nice thing about spritz cookies is that it makes a TON! So there were plenty to snack on.

Sprinkle Pop sent me two varieties of their sprinkles – Vintage Rose Gold, and Sea Glass. I decided to make two different spritz cookie designs so I could use both. Shells for the Sea Glass:

And whatever sort of flower that’s supposed to be for the Rose Gold:

I love the metallic sprinkle varieties, but there are SO many more! Holiday-themed ones, fun confetti shapes. And if you can’t find anything already made on their website you like, they’ll create a variety for you!

Ingredients

  • 1 C (2 sticks) butter, softened
  • 1/2 C sugar
  • 2 1/4 C all-purpose flour
  • 1/4 tsp salt
  • 1 large egg
  • 1/4 tsp vanilla extract
  • 4 oz. white chocolate, melted
  • Sprinkle Pop sprinkles

Instructions

  1. Preheat the oven to 400 degrees F. In the bowl of a stand mixer fitted with the paddle attachment, beat together the butter and sugar on medium speed. On low speed, add in the flour, salt, egg, and vanilla extract.
  2. Place the dough in a cookie press, fitted with the desired shape. Pipe the cookies onto two large ungreased baking sheets.
  3. Bake for 6-8 minutes or until puffed and lightly browned. Remove from the baking sheet and cool completely on a wire rack.
  4. Place a heatproof bowl over a pot of simmering water. Melt the white chocolate, and dip the spritz cookies, either partially or completely. Place on a wax paper-lined baking sheet and top with desired Sprinkle Pop sprinkles before the chocolate is set. Allow the chocolate to harden before eating.
