Baileys Chocolate Chip Cookies have the rich taste of Irish cream and chocolate, without the alcohol. This recipe is also vegan, as well as gluten free, making these cookies a great option for any friends or family with food sensitivities or allergies.

No doubt you’ve noticed already that they look slightly more cookie-like than yesterday’s offering. This is due to having made this recipe twice already and learning from past mistakes.

If you like your cookies on the crisp side, you’ll like these. Whenever a cookie recipe gives a range for baking time, I always go with the minimum time. Because of yesterday’s recipe and having previous experience with this recipe, I baked them for the maximum time.

I don’t know how they’d do only baking for ten minutes, rather than the twelve minutes I did. I suspect that they’re sturdy enough they’d be fine, but I guess I’ll have to use another of my eight bags of Baileys chips and test that out.

I’m sure my sister wouldn’t mind.

I’d heard about Baileys Chocolate Chips maybe six months ago, give or take. I want to say my cousin had shared a link on Facebook, after she’d read an article on them. At the time they were only available on Amazon, and I want to say they were ridiculously priced.

So I opted to wait, then completely forgot about them. I went to the store looking for something else in the baking aisle, and saw them on the shelf. I promptly bought five packages of them. 

I texted a picture of the ingredients to my sister, who noted that she could indeed have them, and that I would be making her cookies using them. And that was my intention while she was here, so I didn’t have to spend the money to ship them to her.

No such luck, though.

I would like to think they’ll make a nice consolation package, since the whole purpose of her visit was to pop down to Iowa and see the Dropkick Murphys in concert. The day before she arrived, the concert was cancelled, though. So instead I made her an appointment to get a tattoo down in Sioux Falls.

Which means I have the tattoo bug once again. I have ideas for the other two that I want, but I need to save up for them first. 

Baileys Chocolate Chip Cookies (Vegan and Gluten Free)

Ingredients

• 1 1/2 C gluten free all-purpose baking flour
• 1 1/2 tsp. kosher salt
• 1/2 tsp. baking soda
• 1/2 tsp. baking powder
• 1/2 C butter substitute/vegan shortening
• 1/2 C packed brown sugar
• 1/2 C sugar
• 2 Tbsp. vanilla extract
• 1 package Baileys Chocolate Chips

Instructions

1. Preheat the oven to 350 degrees F. Line 2-3 baking sheets with parchment paper and set aside.
2. In a small mixing bowl, whisk together the flour, salt, baking soda, and baking powder.
3. In a medium mixing bowl, beat together the butter substitute and both sugars. Add the vanilla extract. Gradually add the flour mixture, then stir in the Baileys chips.
4. Using a 1 Tbsp. scoop, place the dough on the prepared baking sheets.
5. Bake 10-12 minutes. Cool on baking sheet for 10 minutes, then remove and cool completely on wire racks.
