Fudge Brownies with Walnuts


2 Tbsp. Extra light olive oil
6 Tbsp. Hershey’s Special Dark Cocoa
1 stick unsalted butter
1  C Caster/Superfine sugar
2 large eggs
1 tsp. vanilla
3/4 C A/P flour
1/2 C chopped walnuts


Preheat oven to 350°F. Butter an 8X8 inch baking dish. In a medium saucepan, combine the cocoa, olive oil and butter over low heat. Once melted, remove from heat, and stir in sugar, eggs and vanilla. Beat until combined. Stir in flour and walnuts, then pour into prepared pan. Bake 25-30 minutes. Cool pan on a wire rack.
