Peanut Butter Chocolate Chip Cookies

(From Every Day Food, March 2010 Issue)


1 C creamy peanut butter
1/2 C packed light brown sugar
1/2 C white sugar
1/2 C semi-sweet chocolate chips
1 tsp. vanilla extract
1 large egg, beaten


Preheat oven to 350°F. Mix all ingredients together in a medium mixing bowl. Take tablespoon-sized portions of the dough, roll them into balls, and place about 2 inches apart on 2 ungreased cookie sheets. Using a fork, press down on each cookie in a crisscross pattern. Bake cookies for 10-12 minutes, rotating cookie sheets halfway through baking time. Cool completely on cookie sheets.
