4 slices bacon, sliced into 1/2-inch pieces
1 small white onion, diced
1 clove garlic, minced
coarse salt & ground pepper
1 Tbsp. all-purpose flour
2 C whole milk
2 packages cheese tortellini (8.8 oz., each)
1/2 C grated Parmesan
1. Heat broiler, with rack in top position. In a medium saucepan, cook bacon over medium heat, until browned & crisp, about 10 minutes. Transfer to paper towels to drain. Add onion & garlic to pan, and season with salt & pepper. Cook, stirring occasionally, until onion is soft, about 8 minutes. Add flour and cook, stirring, for about 30 seconds.
2. Slowly add milk, whisking constantly. Add tortellini, and bring to a boil over medium-high, stirring occasionally. Reduce heat & simmer for about 4 minutes, stirring often, until liquid has thickened. Remove from heat, stir in bacon & 1/4 C Parmesan. Transfer to a broiler-proof 2-qt. baking dish and top with the other 1/4 C Parmesan. Broil until top is golden brown, 3-5 minutes.
