Lemon Peppered Chicken

(Adapted from a Land O’Lakes recipe)

Serves 4


8 oz. angel hair, spaghetti, or linguini pasta
1 lb. boneless skinless chicken breasts, cut into bite-sized pieces
2 Tbsp. olive oil
2 Tbsp. butter
3 Tbsp. lemon juice
1/4 tsp. cayenne pepper
salt & pepper, to taste
Chopped fresh or dried parsley


Bring salted water for pasta to a boil. Cook pasta according to package directions. Drain, and keep warm. Meanwhile, heat butter and olive oil in a large skillet over medium heat. When butter begins to foam, add chicken, and cook until golden brown (8-10 minutes). Stir in lemon juice, cayenne pepper, and salt & pepper, if desired. Add the cooked pasta to the skillet and toss to coat with the sauce. Sprinkle with fresh or dried parsley before serving.
