Serves 4-6
Ingredients:
3-4 large Russett potatoes
1/4 C olive oil
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. celery salt
1/4 tsp. paprika
1/4 tsp. chili powder
1/4 tsp. onion powder
1/4 tsp. garlic powder
1/2 C shredded cheddar cheese
Directions:
Preheat oven to 400°F. Cut potatoes in half, then slice lengthwise, into 1/4-inch pieces. Toss with olive oil and spices, then spread out in a single layer on a baking sheet either sprayed with cooking spray or lined with parchment paper. Bake for 20 minutes, then flip over. Bake 20-25 minutes more, or until browned/crispy as desired. Remove from baking sheet, and place in a 1 1/2-qt. casserole or baking dish. Top with cheese, then bake 4-6 minutes more or until cheese is melted.
