It’s hard to believe it is already August, and in just the blink of an eye, school will be starting again. I don’t know about the rest of you, but I am NOT anywhere near ready. School supplies? Yeah, still need to get those. New clothes? We’re okay on those for a bit, since the bambino went through a growth spurt earlier in the summer. He still needs new shoes, but one thing at a time.
I noticed the bambino has taken to grabbing granola bars or other snack foods once he and Jay get home from school/work. I suppose it’s to be expected – He’s ten after all. And though he’s not (yet) a latchkey kid like Jay and I both were at his age, he does a lot independently, and he’s more than capable of getting his own snack. But if it’s a Friday that I’m not working, I can make sure he’s snacking on something a little healthier than just a bar or cookies or whatever he gets his hands on.
And we are a family who loves cheese. I have cheese and crackers in some form almost every afternoon at work. I am that person who suggests the waiter leave the Parm wedge and grater at the table, and I will let them know when I’m done. One of the bambino’s favorite dishes is grilled cheese. Jay’s maternal grandparents were dairy farmers, and he hasn’t really met a cheese he hasn’t liked.
If I let the bambino, he would just eat slices or chunks of cheese. When he makes cheeseburgers, he is that kid who will sneak an extra slice of cheese to eat while he waits on the burgers to finish cooking. I wanted to come up with a snack he could easily make himself without too much effort. At his afterschool/summer care program, they do a lot of tortilla rollups, so I thought I’d create one for home.
The bambino loves apples, applesauce, apple butter, apple juice. He also loves cheese. Colby-Jack is his favorite, but apples pair well with cheddar. Rather than expect him to slice apples with a mandoline, I thought apple butter would be easier to manage. He’s familiar enough with slicing cheese.
It’s simple enough to assemble. Spread some apple butter on a tortilla, layer 3-4 slices of cheddar cheese, and roll up! You can cut them in half for presentation purposes or eat as-is.

- 1 large (8-inch) flour tortilla
- 1/4 C apple butter
- 2 oz. (approximately 3 slices) of Crystal Farms® Cheddar Cheese
Spread the apple butter on the tortilla.
Top with the slices of cheese.
Roll up, and slice in half if desired.
