Cheesy BBQ Beef Hash Brown Bake (and a giveaway!)

It’s already been one of those weeks and it’s only Tuesday! I feel like I’m swamped with all sorts of stuff, and while Jay was nice enough to take me out last night, we both decided we should stay in this evening. And since I’m craving all sorts of comfort food right now, I decided something with beef, cheese and potatoes was necessary.

It’s got cheese, shredded potatoes, tangy-sweet-spicy BBQ sauce mixed with ground beef. And it’s perfect for those days when you need a hug from your dinner. Y’know, I’m having a hard time believing I just wrote that sentence, but I’m so drained right now, I think I’m going to leave it. I’m already bordering on another Father Ted moment, and each time I reread that, I get more giggly.

Back to the food…I like to make my own BBQ sauce, just because I don’t like overly sweet ones…Something vinegary-tart with a little kick to it is good. But you could use your favorite bottled variety as well. I did take the shortcut of using frozen hash browns:

(Mr. Dell’s are my favorite because the only ingredient is potatoes!) But again, you could shred 3-4 good-sized Russets instead of using frozen.

Cook Time 45 minutes
Total Time 1 hour


  • 1 lb. lean ground beef
  • 1 C BBQ sauce
  • 1/2 a 30-oz. package frozen country-style shredded hash browns (about 4 cups)
  • 2 C shredded Cheddar cheese
  • Cooking spray


Preheat the oven to 425 degrees F. Spray a 13 X 9-inch baking with cooking spray and set aside.

Brown the ground beef in a large skillet, cooking until no longer pink, about 7-10 minutes. Stir in the BBQ sauce, then spread the mixture in the bottom of the baking dish. Top with the hash browns, then cover tightly with foil.

Bake for 30 minutes, then uncover and bake 10 minutes more. Top with the cheese and bake 5 minutes, or until the cheese has melted.
