Buffalo Chicken Cheese Fries

I don’t remember where he saw it (I think TV, when we zoned out to actual satellite/cable in our hotel in Wisconsin), but Jay told me about a baked potato he’d seen, that he wanted to try. It was a potato, topped with buffalo chicken pieces. There may or may not have been cheese. When we were over for Sunday dinner, he and his brother started talking about buffalo chicken, and we originally settled on Buffalo Chicken Dip for dinner. He mentioned the potatoes, and though we didn’t pick up any potatoes, we had a bag of fries. So I made some Buffalo Chicken Cheese Fries.

This was just as “junky” as eating at Buffalo Wild Wings, and it cost me about a tenth of what I’d’ve paid had we gone out. And that’s a good thing.

Buffalo Chicken Cheese Fries

Buffalo Chicken Cheese Fries

Cook Time 15 minutes
Total Time 45 minutes


  • 1 lb. chicken breasts
  • 1/2 of a 33.6-oz. bag of steak fries
  • 3 Tbsp. butter
  • 1/2 C buffalo wing sauce
  • 3/4 C shredded mozzarella
  • salt & pepper


Bring a medium saucepan filled with water to a boil. Drop in the chicken breasts, and reduce to a simmer. Cover and poach 10-15 minutes, or until the chicken is cooked through. Allow to rest 5 minutes on a cutting board, before shredding or dicing.

Meanwhile, cook the steak fries according to the package directions. Set aside.

After the chicken is shredded/diced, melt the butter in a medium saucepan. Season the chicken with salt and pepper, and toss with the melted butter. Add in the buffalo wing sauce, and toss to coat.

Preheat the broiler. Line a baking sheet with foil well-covered with cooking spray. Layer the fries, chicken and mozzarella. Repeat, if desired. Place under the broiler until the cheese has melted and the chicken and fries have been heated through--About 3-4 minutes.
