Kahlua Brownies with Cream Cheese Frosting

The workplace potluck. It can be a weekly, monthly, or even annual event. Some places (like my current employer) love a potluck/excuse to eat all sorts of goodies. Other places (like my former employer) would rather die than take part in such frivolities. I enjoy them, because let’s be honest, I like to eat. And while I was constantly bringing in cupcakes at my previous job, I’m liking that my current coworkers are still new enough that I can make new dishes. Like these Kahlua Brownies with Cream Cheese Frosting.

These actually were born of slight desperation. I couldn’t think of anything to bring to our most recent potluck, and even went begging on Facebook for ideas. Last month, I brought Buffalo Chicken Dip, and unfortunately for me, people loved it as much as I do, so there was precious little for leftovers. Before that, I think I copped out and picked up cupcakes from the store. This time, though, I wanted to make something a little different, but that wouldn’t require a lot of work on my part.

So the morning of, I opted for brownies, and for whatever reason, I decided they needed a little kick from some booze. My boss appreciated it.

The brownies are easy enough to put together, as is the cream cheese frosting. The Kahlua gives them just enough warmth without being over-powering.

And they make enough that I’ll be sharing them with friends. Mainly so I don’t eat them all.

[b]For the Brownies:[/b]

  • 1 1/3 C flour
  • 3/4 C unsweetened cocoa powder
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 2/3 C sugar
  • 3/4 C unsalted butter, melted (1 1/2 sticks)
  • 1 oz. Kahlua (I used the Salted Caramel variety)
  • 2 large eggs
  • 1 tsp. vanilla

[b]For the Frosting:[/b]

  • 4 oz. cream cheese
  • 1/4 C unsalted butter (1/2 stick)
  • 1 tsp. vanilla
  • 2 C powdered sugar
  • 2 Tbsp. heavy cream
  • chocolate curls for decorating, optional


Preheat the oven to 350 degrees F. Grease a 9x13-inch baking pan with butter and set aside.

In a medium mixing bowl, whisk together the flour, cocoa powder, baking powder, and salt.

In a larger mixing bowl, combine the sugar, melted butter, and Kahlua. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla.

Add the flour mixture, about a cup at a time, mixing just until combined.

Spread the batter in the prepared baking pan. Bake for 20-25 minutes, or until a tester inserted in the center comes out with just a few wet crumbs on it. Cool completely on a wire rack.

In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese and butter together on medium speed. Add the vanilla.

Drop the speed to low, and add the powdered sugar. Add one ounce of the cream. If the frosting is too thick, add the remaining cream. Scrape the bottom and sides of the bowl, then whip the frosting on high speed for 1-2 minutes. Spread the frosting over the cooled brownies, and top with chocolate curls, if using.
