I shouldn’t complain about the fact that this seems to be a really long week, in spite of the fact that it’s only Tuesday. Especially since my boss is awesome and is letting me take a vacation day on Friday. I’m either going to head back to Sioux Falls to see about getting the rest of Junior’s work done, or to shop for costumes. Jay & I have been invited to a Halloween party next week, and according to Katie, costumes are mandatory. I’m still thinking of ideas.
I went running this morning for the first time in a week, and it was COLD this morning! Over the weekend I did buy a pair of long running pants and while they helped, I was still chilly when I got home. But I felt good. We’ll see how I feel tomorrow morning. My plan for right now is to get up and hop on the elliptical. Or maybe I’ll pop in one of my Pilates DVDs.
When I got home from work, I got started on dinner. Jay had asked when we went shopping Sunday if I’d make enchiladas, since he likes them a lot, and it’s been a really long time since I’ve made them. I had chicken thawed already & the tortillas bought awhile ago, so I obliged. I’m sure my enchiladas aren’t anything authentic, but Jay likes them well-enough. I poached my chicken breasts, then shredded them while the oven was heating up:
I prefer corn tortillas to flour when I make enchiladas, but they always seem to split on me. This time, though, the stars aligned (or I heated them up enough for once in my life) and they rolled up perfectly. I then shredded a bunch of Colby-Jack on top:
Add a little hot sauce on top & they were good to go! And I have leftovers for lunch tomorrow, which is nice too. And since I was wishing for mandatory naptime around 11 this morning, I think I’ll head off to bed. Just 2 more days to go, and I’ll have a nice long weekend!
