“There isn’t enough life on this ice cube to fill a space cruiser.”

I woke up this morning to this:


I joked on Facebook that I wasn’t overly thrilled to have woken up on the planet Hoth. I don’t mind the snow that much, but the wind is awful.


And it’s going to be absolutely frigid overnight & tomorrow. No matter. We have someone awesome here in the neighborhood–who was out with their snow blower and apparently did the entire block.

And because we were “trapped” indoors for most of the day, I decided that I needed to bake. Since Hy-Vee got hazelnuts back in stock, I made biscotti.


I used the Italian cookbook Jay got me for my birthday. The bambino helped a bit when I was making the dough, and he seemed to like them (as soon as they came out of the oven, he asked for one). I’ll have plenty for my morning coffee breaks next week, as well as some to share with anyone who might want them!

I decided when I read about it, that I needed to make Iowa Girl Eats’ Mom’s Baked Chicken Parmesan. Easy and delicious.


Because I used chicken breasts, I had to increase the baking time a bit, but it was tasty, and the chicken was moist & cooked perfectly.


While it was baking, the mail showed up. I ordered some Avon last week, and it showed up this afternoon. Which is good since I’ve been out of my eye moisturizer for weeks now.


And I got myself some new nail polish too:


Since I worked for so many years in food service, I couldn’t wear nail polish for basically more than 24 hours at a time (once it starts chipping you have to remove it). When I was in grade school & high school, I was a bit of a nail polish junkie. I think I’ll use the green for my toes, and the rose for my fingers–Tomorrow.

After dinner, the bambino was allowed to watch a movie and I told him I’d make a treat:


He likes popcorn as much as I do! I picked up some organic stuff awhile back:


I have to say, I don’t think it’s nearly as good as the Lakota Popcorn I’ve bought before. Sorry Natural Value, but you’re kind of bland & boring. At least the Lakota Popcorn is local to South Dakota. Plus, it doesn’t seem to take as long to start popping. Still, the Natural Value makes for a decent snack:


And I am not ashamed to admit that I melted an entire stick of butter to pour over this stuff:


Just in case anyone is wondering, that bowl there is actually only half of what I made. With half the butter on it. The other half went to Jay & the bambino to share. I think I’ll hop on the elliptical tomorrow, in between loads of laundry…Plus, it’ll help my SAD.
