Last month, the Sunday Supper crew shared Mom’s Favorite recipes. Now that it’s June, it’s time to share Dad’s Favorites. And my dad’s all-time favorite food is Fried Chicken.
I have to agree with him. Well, about the chicken part, anyway. I’ll eat it in just about any form presented to me. I absolutely love it. If I could only eat one meat for the rest of my life, chicken would be it. And I do love me some good fried chicken.
I remember more meals with my dad as a kid, than I do with my mom, especially once my parents divorced. Not that my mom can’t cook, but she worked retail for many years (and my dad worked in food service), so there was a lot of either heat & eat, or once my sister and I were older, there was a lot of fending for ourselves if we wanted to eat. Having joined the ranks of working parents, I don’t fault my mom for that. I wouldn’t have this blog if that hadn’t instilled in me a knowledge and love of cooking.
I have my dad to thank for it, too, though. I used to watch cooking shows with him as a kid, on PBS, and later on cable. The Frugal Gourmet, Yan Can Cook, and whatever Justin Wilson show was on PBS back in the mid-’80s are the ones I remember most. Due to us spending the weekends with my dad, he had more time to cook. So we’d have fried chicken, city chicken, or burgers, with mashed potatoes or French fries, and Sunday mornings, he’d make eggs, sausage, biscuits, sometimes sausage gravy and biscuits. I do remember, though, my mom used this big yellow Club aluminum skillet when she’d make fried chicken–The pan had belonged to my grandma (my dad’s mom), and it was the one pan big enough to hold all the pieces of chicken. I believe my sister has it now.
Of course, I can’t have fried chicken without some crackers and gravy, especially since that’s another of my dad’s favorites. I wish he could be here to share this with us this weekend! Begin heating the peanut oil in a heavy-bottomed skillet over medium heat. Place the chicken between two sheets of waxed paper, and pound with a meat mallet until 1/4-inch thick. In a shallow dish, whisk together the flour, salt, pepper, onion powder, garlic powder, oregano, and paprika. In a second shallow dish, whisk together the milk and egg. Dredge one of the chicken breasts in the flour. Shake off any excess, then dip in the egg mixture. Allow the excess to drip off, then coat with flour a second time. Place the chicken in the heated skillet, and repeat with the remaining chicken. Cook for 7-10 minutes, until nicely golden brown. Carefully flip over, and cook another 7-10 minutes. Drain on a paper-towel-lined plate and allow to rest for 10 minutes before serving.
