Steak and Potato Sandwiches

I feel like I’m suffering growing pains lately. I don’t know what else to call the uncomfortable realization I came to a few days ago, that truly, you can’t ever go home again. And by that, I mean it hit me just how much things change, and people grow up, grow apart, friends you thought you would have forever drift apart or change in ways you weren’t expecting. Sometimes it’s for the best. Other times, it stings and you try to cling to the last vestiges of what once was, but can never be again. I had an unsettling moment like that, and while I nursed my hurt feelings, I did what I usually do, and turned to my immediate family and food. I didn’t go on an ice cream binge, but I wanted some junky comfort food, so I made some Steak and Potato Sandwiches:

Steak and Potato Sandwiches - TramplingroseLast week, we had dinner at Buffalo Wild Wings, and on their limited-time only menu, they had a steak and cheese “griller” (a quesadilla, if you will) that also contained French fries in the sandwich. Except for the onions, it looked really good, but unfortunately for me, they happened to be out of French fries that day. And since there wasn’t really any point of trying the griller without the fries, I opted for my usual order of boneless wings. But I kept that sandwich in the back of my mind.

Steak and Potato Sandwiches - TramplingroseI’m a sucker for sandwiches that include fries. Like those from Primanti Bros., or Chip Butties (after finding out just what a chip butty was). Add in meat and cheese, and it’s practically perfect! And after my sad epiphany, it was just what I needed. Since I didn’t know exactly what (besides meat, cheese, onions and fries) Buffalo Wild Wings puts in their steak and fries griller, I just came up with my own thing. It worked.

Steak and Potato Sandwiches - TramplingroseI will admit, though, it was a little dry. I’d thought about making a cheese sauce instead of just topping them with cheese, but I got lazy. I also thought after I’d started eating mine that it might’ve been a good idea to toss the steak strips in some steak sauce or some other sauce. Perhaps next time!

Steak and Potato Sandwiches

Steak and Potato Sandwiches
Prep Time 45 minutes
Cook Time 5 minutes
Total Time 50 minutes


  • 1 12-oz. ribeye steak, cooked as desired, and thinly sliced
  • 16 oz. shoestring French fries, cooked
  • 1 1/2 C shredded Cheddar cheese
  • 8 medium flour tortillas


Begin heating a large skillet over medium heat.

On a large work surface, place 3 oz. of steak on a tortilla. Top with 4 oz. of French fries, 3 oz. of cheese, and another tortilla.

Place in the preheated skillet, and cook until golden brown on one side and the cheese is melted, about 4-5 minutes per side. Flip over and cook until golden brown on the second side. Slice into six pieces.

Repeat with the remaining tortillas and ingredients.

I figure that since the bambino ate half of one without much prodding, it’s a keeper!
