Cheesy Potato Bacon Frittata Sandwich

It’s been awhile, eh? It’s been rather busy lately, between work and everything else going on. I actually went swimming for the first time in YEARS on Sunday…And by that I mean I actually put on a bathing suit and got into the little kids pool and played with the bambino, because I can’t actually swim. He can’t quite yet either, but at least he’s taking lessons.

I wanted something fairly quick and easy for dinner (ie., I didn’t want to have to think about it too much). Enter the Cheesy Potato Bacon Frittata sandwich:

A bit like a loaded baked potato (minus the sour cream and scallions), or like a breakfast sandwich all mixed up. Either way you look at it, it’s delicious. And the whole thing came together in just about 30 minutes, which is a good thing.

And no, that’s not ketchup on there…It’s taco sauce for a little more spice.

Yield: 6-8

Cheesy Potato Bacon Frittata Sandwich

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes


  • 2 C frozen diced potatoes
  • 1/4 C olive oil
  • 8 eggs
  • 1/2 C milk
  • Hot sauce (optional)
  • salt & pepper, to taste
  • 1/2 C bacon, cooked crisp & crumbled
  • 1 C shredded Cheddar-jack cheese
  • 6-8 hamburger buns, toasted


Preheat the broiler. Heat the olive oil in a 10-inch oven-proof skillet. Add the potatoes and cook about 10 minutes or until softened and slightly crispy.

In a medium bowl, whisk together the eggs and the milk. Add the hot sauce if using, and salt and pepper. Stir in the bacon pieces and Pour the egg mixture over the potatoes, and allow to set for a couple minutes, before lifting up the mixture and letting some of the uncooked eggs flow underneath. Once the mixture is mostly set, pop it under the broiler for about 5 minutes, to finish cooking the top.

Turn the frittata out and let rest on a cutting board for 5 minutes before slicing into 6 or 8 pieces. Serve on toasted buns.

Montauk Sunrise

I decided I’d start with the Montauk Sunrise–Their house breakfast blend. This is SO good. It is what a cup of coffee should be. Smooth, rich, and with just a hint of bitterness (which I’m pointing out because I do like that in a coffee–I know many people don’t).
