Gnocchi alla Romana #SundaySupper

I have been waiting for the perfect opportunity to make Gnocchi alla Romana, and thanks to this week’s Sunday Supper theme, I have it!

This week, we’re all featuring Italian foods, and Gnocchi alla Romana is one of those recipes I’ve had book-marked for YEARS. I do not really know why it’s taken me this long to get around to making it, though.

These are not the gnocchi you’re used to seeing–Puffy potato dumplings. These are made with semolina or farina, and are cooked and served not unlike slices of polenta. In today’s case, I’ve chosen to serve them on top of marinara, topped with grated Parmesan.

You could also top them with slices of mozzarella, and pop them under the broiler. We’ve had them both ways, and both are good!

Ingredients

  • 3 C whole milk
  • 1 C farina
  • 2 large eggs, lightly beaten
  • 1 Tbsp. unsalted butter
  • 1 tsp. salt
  • freshly ground black pepper
  • 1 C freshly grated Parmesan
  • 1/4 C unsalted butter
  • Marinara sauce, heated

Instructions

Bring milk just to a simmer over medium heat in a large saucepan. Whisking constantly, add the farina in a slow stream. Switch to a wooden spoon, and stir until the mixture thickens, about 5 minutes. Remove from the heat.

Stir in the eggs, butter, salt, and pepper. Beat until smooth.

Spread the mixture in a 10x15-inch baking sheet, and level with a spatula. You may need to dip the spatula in water occasionally, to keep from sticking. Cover with plastic wrap, and refrigerate until firm, approximately 2-3 hours.

Using a 2 1/2-inch cookie/biscuit cutter periodically dipped in cold water, cut the farina into circles. Place the gnocchi in a buttered baking dish, overlapping to fit. Sprinkle with Parmesan, and dot with butter. Bake for 30 minutes or until crisped and golden. Serve on top of heated marinara, if desired.
