Growing up, we would have oatmeal for breakfast in the fall and winter before school. During the spring and summer months, it was usually just cold cereal, so the hot oatmeal was a nice treat, especially when we’d have to stand at the bus stop and wait. It was usually just instant oatmeal–My parents both worked, so my mom didn’t have the luxury of standing at the stove fixing a hot meal every morning. My dad would either already be at work, or if he had worked a closing shift the night before, asleep. So instant oats it was, and I’ll still buy them on occasion now. Jay got them occasionally as a child too, as well as old-fashioned oats that he and his siblings were allowed to flavor themselves with maple extract and brown sugar.
I didn’t actually discover steel-cut oats until I was an adult, and here in South Dakota. I remember finding a recipe from Alton Brown for cooking them up, which included toasting them in butter first. They were amazing, though they took forEVER to cook. Not something you want to make when you’re absolutely starving and want/need to eat RIGHT. NOW.
Fast-forward a few more years, and while I love steel-cut oats, as does the bambino, they’re the occasional weekend indulgence. I love them simply with a bit of cinnamon, some brown sugar, and a pat of butter. If I’m feeling really indulgent, I’ll drizzle some cream on top, along with a sprinkle of pecans or walnuts. And while I make sure the bambino has a decent breakfast before school, cooking up a bowl of steel-cut oats isn’t always feasible. So when Hamilton Beach asked if I was interested in trying out their 4-20 Cup Rice and Hot Cereal Cooker, I jumped at the chance. Because not only would it be great for a hot breakfast for all three of us each morning, it obviously cooks rice, and that’s one of the few things I can count on the bambino to scarf down!
It’s great because it’s programmable, which means I can make something like Pumpkin Spice Steel-Cut Oats the night before I go to bed, and it’s ready and waiting for me when I get up in the morning. Plus, it’ll cook up enough rice for several meals. The first thing I made with this was a large batch of brown rice–A side for one meal, and the basis for some fried rice later in the week. And though it doesn’t cook rice or grains any faster than it would if I was standing at the stove, it’s hands-off, which means I can do other things (like sleep) while it does all the work.
The other thing I like about this is that it’s intuitive. It will adjust the cooking time, depending on the liquid level in the machine. In the case of the oats, I’d set it for 50 minutes, but it wound up taking about 90.
And you do have to be careful in cooking oats in this–I popped the lid to give them a stir, and some of the liquid spilled out. I had a smaller, cheaper rice cooker a few years ago, and it would constantly boil over whenever I’d cook anything other than plain white rice. But it takes some tweaking and playing around to get the liquid ratio just right. I think that’s pretty much the case with any rice/hot cereal cooker.
This recipe makes a lot, but that’s kind of nice. You can make them overnight on a Sunday, and have breakfast for the rest of the week!
Whisk together the water, milk, pumpkin, pumpkin pie spice, salt, and brown sugar in the bowl of the rice/cereal cooker. Fold in the oats and nuts. Cook on the "Hot Cereal" setting until oats are tender, and liquid has been absorbed to the desired level. This may take anywhere from 90 minutes to two hours. Stir the mixture occasionally.
