“I thought it was the end…I thought it was the 4th of July…”

It’s been a really long, but fun weekend, and I kind of wish that I was like Jay and would be off for the rest of this week. I’m not ready to go back to work just yet! Last night/this morning, I tried The Pioneer Woman’s iced coffee concentrate. That woman is a genius, I swear.

After reading the comments, I opted to use my French press, and since she recommends using stronger & richer coffee, I used the espresso setting on my coffee grinder. I thought it turned out well, although I probably should’ve added some sugar. Perhaps if I make it again overnight tonight, I’ll do that tomorrow.

We spent the day down in Inwood, Iowa and Sioux Falls. Almost all of Jay’s dad’s family was there…Including a few family members I hadn’t yet met.

The bambino had a lot of fun showing off for a new audience. And since it’s a festive holiday and all, one of Jay’s cousins brought a bunch of stuff for the littler cousins:

Like bubbles and headbands. There was a bunch of other stuff, but I think a lot of it got lost in the shuffle of 2 preschoolers & a toddler running amok.

We walked down to a park for a little while–Inwood’s arts festival was going on. We found a bunch of Star Wars and Batman stuff that we would’ve liked to have bought for the bambino, but luckily for us, we had no cash on us.

You know you’re in the Midwest when you go to an arts festival and there’s a tractor pull going on:

The bambino didn’t care for all the smoke spewing from the tractors, so we didn’t stick around too long to watch. After saying our goodbyes, we headed back north, with a stop in Sioux Falls. The primary purpose was to get the bambino some new shoes, although Jay wanted to look around at a few things. Besides some new Converse, the bambino also wound up with some new Legos and a new pterodactyl. We also made a stop at Texas Roadhouse. I had every intention of cooking dinner tonight, but by the time we got to Sioux Falls, and got the bambino’s shoes, it was close to 4:30. And I was starving. So we went and had dinner. I ate way too much, and we probably should’ve just come on home. As it was, we didn’t get back to Brookings until 7:30, so if I cooked, dinner would’ve been REALLY late.

I did end up with one fun item:

Chocolate Oatmeal. I’ll have to try them out tomorrow, but I’m hopeful that they’re good (even if they are instant oats). And with that, I’m off to bed. Tomorrow’s going to come way too soon!
