Lemon Brown Sugar Chicken. I think I first saw it on Iowa Girl Eats a couple years ago, and since then, it’s become a staple member of the dinner rotation. I shove the recipe off on anyone even remotely interested in it. If I have chicken thawed and can’t think of anything else to do with it, this is what I make.

It’s easy (the oven does most of the work for you), it’s simple (minimal ingredients), and most importantly, it’s DELICIOUS! It’s a sweet and sour-type chicken that isn’t heavy and rich.

I made it for my mom during one of her visits, and she agreed that it was really good. I haven’t had the chance to make it for my dad, although I can’t remember his thoughts about sweet and sour chicken, so he might not care for it. Which is fine. It means more for me!

  • 1 lb. boneless, skinless chicken breasts
  • 3/4 C flour
  • 1 1/2 tsp. paprika
  • 1/2 tsp. salt
  • 2 Tbsp. olive oil
  • 1/4 C + 2 Tbsp. lemon juice
  • 2 Tbsp. brown sugar


Preheat the oven to 350 degrees F.

Place a chicken breast between two sheets of wax paper and pound to 1/4-inch thin with a meat mallet. Repeat with remaining chicken.

In a shallow dish, whisk together the flour, salt and paprika. Begin heating the olive oil in a large skillet. Dredge the chicken in the flour, then place in the skillet. Cook until browned on each side, about 3-4 minutes (the chicken doesn't need to be cooked through). Place the chicken in a baking dish and set aside.

Pour the lemon juice into the skillet and stir, scraping up any browned bits. Cook 1-2 minutes, until slightly thickened. Pour over the chicken in the baking dish.

Sprinkle the brown sugar over the chicken, and bake for 30 minutes, or until the chicken is cooked through. Spoon any remaining sauce over the chicken to serve.

I will say, it makes me long for the days when you’d actually get 4 chicken breasts in a package, like when I was a kid. Ah, well. One of these days, I will remember to double this so I have extra for lunches!
