Strawberry Jello Pie is as easy to make as it is delicious to eat. Cool and creamy, this dessert is made for summer afternoon get-togethers, and weekend treats.

I think my mom made it once upon a time when I was a child, and it was one of those recipes I cut my teeth on, so to speak. Like Jiffy cake and frosting mixes, Strawberry Jello Pie was easy for a 10-or-11-year-old to put together, once boiling water safety was ingrained. And since this is no-bake, it’s a perfect summer treat.The nice thing is, if you don’t like Strawberry Jello, you can swap it out for whatever flavor you want, though I’ve only ever made it with Raspberry and Strawberry. But I imagine it would be tasty with Lemon or Lime, or Cherry, or whatever flavor you prefer!
I did use a pre-made graham cracker crust, though if you have a recipe for one that you like, feel free to go ahead and use that. Or, you can use the crust in this recipe.
Combine the gelatin and boiling water in a large bowl. Whisk/stir until the gelatin has completely dissolved, 2-3 minutes. Combine the cold water and ice cubes (should be 1 cup), then add to the gelatin. Stir until thickened and most, if not all the ice has melted. Whisk in the whipped topping, and refrigerate for 15-20 minutes. Spoon into the prepared crust, and refrigerate for at least 4 hours, or until set.
