There is a reason I don’t make cookies more often. I eat them all. I don’t even get to the point of baked cookies, I’ll eat bites of dough before they even make it into the oven! Cookies are just so…Easy. Popable. Bite-sized.
The bambino gets a kick out of having treats in the cookie jar, so every once in awhile I make the effort, even though I know any hopes of a diet are out the window.
At least these cookies have oat bran in them. The added fiber makes them quasi-healthy, right?
Just like having them with milk makes them a balanced snack. That’s what I’m telling myself anyway. Preheat oven to 350 degrees F. In a small bowl, whisk together the flour, oat bran, baking powder, and baking soda. Set aside. In the bowl of a stand mixer fitted with the paddle attachment, combine the melted butter and the sugars. Add the egg, and mix well. Add in the peanut butter and vanilla, and mix well. On low speed, add in the dry ingredients, mixing until combined. Using a small (1 Tbsp.) scoop, place the dough on ungreased cookie sheets. Bake for 10-12 minutes or until golden brown. Cool 5 minutes on cookie sheets before cooling completely on wire racks.
