Flatbread Pizzas

Boy, when it rains, it pours. I’ve suspected for a couple weeks now, that Junior, my little green KIA, was having some issues. For a little while, I chalked it up to the frigid Arctic blasts we’ve been hit with recently. The car has been sluggish and struggles to get going, but seems to do a bit better once it’s been running and has had a chance to warm up. But lately, I’ve begun to think that it’s more than 13-year-old car aches and pains, so I took it in to get checked. And it came back with a death sentence…The transmission is failing. Worst possible scenario, as far as car repairs go. And since Junior’s not really worth sinking that kind of money into….We’re now in the market for a new-to-us vehicle.

And even though I say this all the time, and never follow through (and knowing myself, I still won’t follow through)…The sad reality is, we’re on a strict budget now. It’s going to mean cutting back on all the little extravagances we’ve indulged in lately. I had a mini-meltdown Wednesday night about buying train tickets with my bonus check, so that we can go to Ohio for the first time in almost 4 years. I regretted a few other things as well, but in the end, it will all work out, as long as we’re careful with planning.

And as much as I wanted to order myself a pizza to cap off the weekend…I decided instead I would force myself into the kitchen and make my own. To switch things up a little bit, I decided to make flatbread pizzas.


Basically I just made pizza dough, cooked it on the griddle, and then made pizzas. Little pizzas, since I thought the bambino might be more inclined to actually eat one if it was something closer to his size.

I kept them simple…Cheese pizzas only. I really do enjoy just a plain cheese pizza from time to time. And homemade is always much better than store-bought…Unless it’s George’s, and then it’s kind of a toss-up!

Flatbread Pizzas

Flatbread Pizzas
Prep Time 20 minutes
Cook Time 25 minutes
Total Time 45 minutes


  • 3 C flour
  • 1 package active dry yeast
  • 1/2 tsp salt
  • 1 C warm water (120 degrees F to 130 degrees F)
  • 2 Tbsp olive oil
  • 1 C pizza sauce
  • 1 1/2 C shredded mozzarella
  • pizza toppings of choice (pepperoni, sausage, black olives, bacon pieces, peppers, etc.)


In the bowl of a stand mixer combine 2 cups of the flour, the yeast, and salt; add warm water and oil. Beat with the paddle attachment on low speed for 30 seconds, beat on high speed 2 minutes.

Switch to the dough hook and knead the dough for 4-5 minutes. Add in the remaining cup of flour, 1/4 C at a time, to make a somewhat stiff dough (it should be smooth and elastic).

Place the dough on a lightly floured surface, and divide in half. Cover, and allow to rest for 10 minutes.

Preheat oven to 425 degrees F. Also begin heating a griddle over medium-high heat.

Divide each dough half into 3 portions. Roll or stretch each portion out into a circle, then place on the griddle. Cook until browned, about 5-6 minutes per side.

Top the pizzas with 2-3 Tbsp. of the pizza sauce, 1/4 C of cheese, and whatever other toppings of choice. Bake for 7-10 minutes, or until the cheese is melted.
