Rosemary Parmesan Drop Biscuits

I love it when people offer me free food. Thursday, I got a bunch of herbs from Diana, who cleaned out her herb garden, as well as a TON of tomatoes from Janean (courtesy of one of her friends). I spent a few hours that night blanching, peeling and freezing tomatoes, and let me just say that as of right now, I’m a little sick of looking at them! But while working on those, I was thinking of ways to use the herbs I got from Diana. I’m thinking of trying to maybe dry the parsley she gave me because there is a LOT. For the rosemary, my first thought was a beef roast, but I don’t have one. Then I remembered the biscuits that top the Italian Pot Pie I’m fond of making. And I decided to tweak that recipe ever-so-slightly and make Rosemary Parmesan Drop Biscuits.

Rosemary Parmesan BiscuitsI love these when the bottom gets all mushy from the beef and tomato mixture. But I’ve often thought that they’d be just as good as regular biscuits split open and smeared with butter.

Rosemary Parmesan Drop Biscuits

  • 1 C A/P Flour
  • 1/4 C grated Parmesan
  • 1 1/2 tsp. baking powder
  • 1 tsp. fresh rosemary, finely chopped
  • 1/2 tsp. salt
  • 4 Tbsp. unsalted butter, melted
  • 1/2 C milk


Preheat the oven to 450 degrees F.

In a medium mixing bowl, whisk the flour, Parmesan, baking powder, rosemary, and salt together. Make a well in the center, and add the butter and milk all at once. Stir with a fork just until dough comes together.

Using a 3-Tbsp. (large) scoop or 2 large spoons, drop portions of the dough onto an ungreased baking sheet, about 2-inches apart.

Bake for 10-12 minutes, or until golden brown on top. Serve warm.
