“I sure tried hard to be cool…”

I’m a little anxious and will be for the rest of the week. I can’t really say why, but I came home in a bit of a tizzy. Jay was in a bit of a funk too, and while I was tempted to order pizza, I decided instead to be good and whip up something at home. Enter Gwyneth Paltrow’s Cacio e Pepe.

I had all the ingredients in the pantry–More or less. I had about 1 serving of linguini, and no pecorino, so I used all Parmesan and 3/4 of the only full box of pasta I had–Rigatoni. It worked well-enough. While it cooked, I made the sauce:

I also used up the last pieces of my Tuscan Roasted Garlic from the awesome folks at Rudi’s Organic Bakery to make some toast.

Brushed with some olive oil, it was better than any garlic bread I’ve had in a long time. I just wish I’d thought of that idea sooner! Then it was time for the pasta:

Comfort food in a bowl, even if it’s blazing hot outside.

I want to make this again, properly, with both the cheeses, as well as the correct pasta (Gwyneth’s recipe calls for spaghetti). And I’ll have to place an order to Rudi’s for more of that bread! Or get Hy-Vee to start stocking it.

The only thing that would’ve made this meal even better would’ve been a nice glass of wine to go with it. But, by the time I thought about it, there wasn’t time to chill anything, so I drank water instead. And had a big bowl of ice cream for dessert. A perfect end to an other-wise tense day!
