Amaretto Strawberries with Sour Cream

I’ve spent the past couple weeks in a funk, one that culminated in my throwing a bag of clothes across the living room in frustration. I suspect that my thyroid meds need to be tweaked again. The last time I had blood work done, it was found that my thyroid was over-stimulated, and so my doctor cut back my dosage. It’s been a few months now, and I’m feeling irritable, depressed, sluggish, and having serious carb cravings. Which are all somewhat “normal” for me, but I know my body well enough to know something is “off.”

I’ve been trying to shift myself to completely stop eating out, unless it’s a special occasion, or we’re in Sioux Falls. I’ve been making a real effort to plot meals that fall within DASH guidelines, or are full of fruits, vegetables, and lean meats. Which is not always easy.

Amaretto Strawberries with Sour Cream

Before I had my temper tantrum, I’d decided to completely give in to my cravings for junk food, and we went to Culver’s for lunch. I needed deep-fried and sugar-filled junk. After that, we went to a movie where I proceeded to eat most of a bag of popcorn (minus any extra salt). After that, I told myself I needed to get back on track, so I sat and made a real meal plan–One including sides, as well as lunches. I’ve been walking home most days, although by the end of last week, I was down to some almonds, and snow peas (a coworker was ordering Jimmy John’s so I piggy-backed on her order).

Amaretto Strawberries with Sour Cream

I found this recipe on the Mayo Clinic’s website, under their collection of DASH Diet recipes. My mom actually makes a version of this, although hers contains a variety of fruits, rather than just strawberries. I don’t believe hers contains amaretto, either.

Amaretto Strawberries with Sour Cream

Amaretto Strawberries with Sour Cream

Cook Time 1 hour
Total Time 1 hour 10 minutes


  • 1 lb. strawberries, washed, hulled, and sliced
  • 1 1/3 C sour cream
  • 1/2 C dark brown sugar
  • 2 Tbsp. Amaretto


In a large bowl, whisk together the sour cream, brown sugar, and Amaretto. Fold in the strawberries.

Chill for at least 1 hour. Divide among 6 chilled bowls and serve.
