Crash & burn…

Man…I didn’t think the weekend had drained me so much, but Tuesday afternoon at work, I almost felt sick with how exhausted I was. I had horrible leg cramps and spent my last 2 hours wanting to crawl into bed. I toughed it out, only because I had a hair appointment, and I would’ve felt guilty about leaving early, then showing up the next day with shorter hair. And since I wasted more time cleaning out my email spam (thank you SO much damn spammers. There is a special place in Hell for you.) last night & trying to unsubscribe to all that nonsense, here’s what I’ve been up to the past couple days:

I decreased the amount of chocolate milk and increased the amount of ice cream I used, but they still turned out more liquid-y than creamy. I suppose I’m just not using the correct setting on my blender or something. Oh well.

Chicken quesadillas. I used to live off these when I had my apartment back in Ohio. Since I got home late from the salon, I wanted something quick & simple for dinner.

Another food magazine subscription to clutter up my house! In my swag bag from the cooking show, there was a coupon for a free issue & $10 subscription to Taste of Home. I figured, “Why not?” My friend Erin loves this magazine & recommended I check it out. So I have. And now I love it too.

When I have some time, I’ll post recipes for what I made last night. That would be some Garlic Oil Chicken. You’re supposed to use garlic-infused oil you make yourself, but since I have some that I bought awhile ago, I just used that. Jay was nice enough to go to the grocery store for me yesterday and pick up the lemon, as well as a few other things. I thought it turned out well:

Plus, it made the house smell garlic-y & lemony. Until Tuesday night, I’d forgotten I had zucchini that needed to be used up, so I made Stuffed Zucchini with Tomatoes and Mozzarella. Jay also picked up the tomatoes & mozzarella for me.

They were good enough that Jay ate and entire one, and was debating on going back for seconds. I was going to send the leftovers to my friend Abby so she & her husband could try it, but Jay nixed that idea.

I was pleased with dinner, even if the bambino filled up on mozzarella and gagged when I made him eat a microscopic bite of zucchini with more cheese than anything else on it!

And the reason Jay didn’t go back for seconds?

He offered to pay for DQ if I’d go and pick it up. I can’t say no to ice cream, so I did. And I have a new favorite there:

I think it’s called the Peanut Butter Blast. All I know is that it has hot fudge, peanut butter and chocolate chunks on it, so it’s good. Sorry Peanut Buster Parfait, you’ve been replaced!
