I still remember the first time I saw The Big Lebowski, and how after the movie was over, I ordered myself a White Russian. I’d never had one before, and since they’re featured so prominently in the movie, I wanted to know what the fuss was all about. Since then, they have been my go-to drink any, all and everywhere.
Now imagine this:
I’ve been wanting to try these ever since I made my Dublin Mudslide Cupcakes back for St. Patrick’s Day. My friend Abby (who loves The Dude as much as I do) mentioned seeing them on a Cooking Channel commercial, and asked if I could please make them. I’ve been toying with the idea for months now, so I figured, why not? I’d planned on making some cupcakes to take into work, although I was going to make Strawberry-Lemonade ones. Instead, I made actual Strawberry Lemonade. And in researching White Russian Cupcakes, I came across this recipe, which I thought sounded the best of all the ones I viewed (the fact that the blog’s title is I Heart Cuppy Cakes makes me like it for other reasons). Plus, it gave me a chance to try making Swiss meringue buttercream.
The cupcakes themselves were pretty easy…And the batter tasted DIVINE. I wanted to just stop and eat that (and I’m pretty sure I ate at least a cupcake’s worth of it while I was spooning it into the liners).
I tried not to freak out about the SMB (I’m not typing that out every single time). I’d read it can be finicky, but I prepped everything (ie., wiping down my mixing bowl, whisks, spatula and paddle attachment with vinegar), and got to work making the meringue. The last time I did Weight Watchers, I got burned out on meringue cookies and the like, but I figure it can’t be all bad if there’s a crap-ton of butter and some Kahlua in it!
The SMB is DELICIOUS. Just about as good as The Best Frosting Ever, although far more of a pain in the arse to make.
But it’s well worth it. I don’t know if it was because I was drinking the White Russian from the above photo shoot (I wasn’t about to waste it!), but I didn’t really taste the alcohol in the frosting or the cupcakes, even though the cakes were brushed with more Kahlua as they cooled. No matter. They’re still good.
