Cheesy BBQ Beef Hash Brown Bake (and a giveaway!)

It’s already been one of those weeks and it’s only Tuesday! I feel like I’m swamped with all sorts of stuff, and while Jay was nice enough to take me out last night, we both decided we should stay in this evening. And since I’m craving all sorts of comfort food right now, I decided something with beef, cheese and potatoes was necessary.

Cheesy BBQ Beef Hash Brown Bake 2

It’s got cheese, shredded potatoes, tangy-sweet-spicy BBQ sauce mixed with ground beef. And it’s perfect for those days when you need a hug from your dinner. Y’know, I’m having a hard time believing I just wrote that sentence, but I’m so drained right now, I think I’m going to leave it. I’m already bordering on another Father Ted moment, and each time I reread that, I get more giggly.

Back to the food…I like to make my own BBQ sauce, just because I don’t like overly sweet ones…Something vinegary-tart with a little kick to it is good. But you could use your favorite bottled variety as well. I did take the shortcut of using frozen hash browns:

Mr. Dell's Hash Browns

(Mr. Dell’s are my favorite because the only ingredient is potatoes!) But again, you could shred 3-4 good-sized Russets instead of using frozen.

  • 1/2 a 30-oz. package frozen country-style shredded hash browns (about 4 cups)

  1. Preheat the oven to 425 degrees F. Spray a 13 X 9-inch baking with cooking spray and set aside.
  2. Brown the ground beef in a large skillet, cooking until no longer pink, about 7-10 minutes. Stir in the BBQ sauce, then spread the mixture in the bottom of the baking dish. Top with the hash browns, then cover tightly with foil.
  3. Bake for 30 minutes, then uncover and bake 10 minutes more. Top with the cheese and bake 5 minutes, or until the cheese has melted.

Now…For the real reason you’re all reading this–The giveaway. I was lucky enough to win $50 in free meat from the Certified Steak & Seafood Company, through the Foodie Blogroll. I could’ve had my box already, but because they ship overnight, and today’s Jay and the bambino’s afternoon to visit Granny and Grandpa, I arranged for delivery tomorrow. The folks at Certified Steak & Seafood were nice enough to also provide me another $50 gift certificate that I’m giving away to one lucky reader!

DETAILS: This contest is only open to US residents (sorry, everyone else!). It will be open from now until 6:00 PM CDT, Friday, March 8, 2013. I will select the winner using Random.org, and that person will have 48 hours to respond. After that, another winner will be chosen, so please make sure you provide me a way to contact you!

So, how to enter? By now, you all know I hate making you jump through giveaway hoops. As usual, just leave me a comment. You can tell me if you prefer surf or turf, tell me to jump off a cliff, or just say “Hello!” If you want to “like” my Facebook page, or follow me on Twitter, you are welcome to do so, and you can leave a comment for another entry, but it’s not mandatory.

  1. Girrrrrrl! That casserole is rock’n my socks off. I’ve made a similar one without the meat for about the last 25 years and have never dreamed of adding bbq. mmmm mmmm. I’m like you with the q; not to sweet and add some tang. I prefer turf!

  2. I found your blog while looking for a quick, easy & delicious dinner idea for tonight. And here it is. Thanks!
